Coffee is a beverage made from the roasted beans of the coffee plant. Coffee plants grow wild in many parts of the world, including Ethiopia, Colombia, Brazil, Vietnam, Kenya, Uganda, Mexico, Peru, Guatemala, Honduras, El Salvador, Costa Rica, Panama, Nicaragua, Dominican Republic, Jamaica, Trinidad & Tobago, Ecuador, Bolivia, Paraguay, Uruguay, China, Japan, Korea, Taiwan, Hawaii, and New Zealand. Coffee is an important crop worldwide. As of 2014, about 80% of the world’s supply comes from just three countries: Ethiopia, Indonesia, and Colombia. Coffee is grown at altitudes ranging from sea level to nearly 4,000 feet above sea level, depending on climate and soil conditions. Coffee cherries are picked by hand when fully ripe and then processed within 24 hours of harvest. The green bean is removed from the cherry and dried before processing. Processing removes the outer skin of the bean, exposing the inner bean. Drying further reduces moisture content and increases the amount of caffeine present. Roasting brings out flavor and aroma compounds.
