Agnieszka Rojewska: “Mixology is totally a new area to explore”
I am very excited about my new project,” says Agnieszka Rojewski, founder of Mixolab. “The idea came up while I was working on my PhD thesis.”

Rojewski, born in Poland, studied chemistry at university and worked as a research scientist before starting her own business. When she was preparing her PhD thesis, she realized how little people knew about coffee preparation. So, she set out to change that.

She founded Mixolab in 2016 with the aim of making coffee accessible to everyone. Her mission is to make coffee fun again.
In 2017, Mixolab launched a Kickstarter campaign to raise funds for the production of a book called ‘Coffee Makers Made Easy’. The book includes recipes for over 40 different types of drinks and uses ingredients such as matcha powder, cacao nibs, and coconut oil.
“We want to show people how easy it is to prepare delicious coffee drinks without having to spend hours in front of the kitchen counter,” explains Rojewski. “Our goal is to help people enjoy coffee every day.”
Rojewska: why did you decide to change the category and try your hand at mixology?
In my opinion, the best way to learn how to make cocktails is to do it – and there are few things better than learning from someone else’s mistakes. I had the chance to meet and talk with Martina Rojewska, co-owner of one of Poland’s most popular cocktail bars, Bar Groszkiewicz. She gave me some tips about what makes a good bartender and shared her thoughts on mixing drinks.
Martina Rojewska is a Polish bar owner, known for being one of the founders of the Polish Cocktail Club and co-owner of Bar Groszkiewcz. Her passion for cocktails began during her studies in London where she worked in a number of pubs. After returning home, she opened her very own bar called Bar Groszkievicz, which quickly became a place to see and be seen. In addition to serving great cocktails, she offers live music performances every week.
I asked Martina Rojewsak whether she thought bartenders could ever become too specialized, and she answered that while specialization is important, it shouldn’t stop people from being creative.
She also told me that the best way to learn to make cocktails is to actually make them. And since we know that Martina loves experimenting, I wanted to give her a challenge: pick three ingredients and come up with a drink based on those flavors.
And now for the next World Championships, what would you like to try your hand at?
In the world of competitive eating, there are many things that people do to win competitions. Some eat large quantities of food, some drink gallons of water, others even use drugs. But one thing that most competitors agree upon is that drinking coffee is essential to winning. So much so that the International Association of Competitive Eating (IACE), the organization that organizes the annual Nathan’s Hot Dog Eating Contest, actually makes sure that contestants are well caffeinated.
The IACE holds a yearly competition where participants compete to see who can consume the most calories within 30 minutes. In 2017, Joey Chestnut won the contest with 12,722 calories, beating out Takeru Kobayashi, who had 11,567 calories. Last year, Chestnut ate 14,818 calories, while Kobayashi came in second place with 13,631.
But why does drinking coffee help people eat more? Well, according to Dr. David Levitsky, a professor of nutrition at Cornell University, caffeine helps increase metabolism. He explains that the body uses energy to digest food, and caffeine speeds up digestion. As such, he says that consuming caffeine increases the amount of energy used to process food.
So if you want to beat your friends at the game of competitive eating, just make sure you have a good supply of coffee on hand.
Besides the competition stage, what are your next plans?
Coffee shops are growing in popularity across Europe. In Germany alone, there are now some 10,000 cafes. And in France, the number of cafés has increased by 25% since 2010.
Roasting is an art form. There are many different types of roasters. Some use traditional methods, while others prefer modern technology. But no matter how it’s done, the goal is always the same – to make the best-tasting coffee possible.
A lot of people like to read or watch movies while drinking coffee. So why don’t we just put our laptops down and enjoy the moment together?
